I think I was perhaps on reverse-tilt when I capped the pot with ATs. I was rushing so hard at the time that I was being over-aggressive just because everything was hitting for me. I tend to do that sometimes being naturally aggressive to start with.

Ok, my follow-up is: How high does my kicker need to be to cap it when somebody 3-bets? AKs seems reasonable to cap it with, what about AQs? I guess AJs would be pushing it?

Also, what is the lowest pair that you would cap it with in that same situation? 77s maybe? With eight players, I've got the odds to hit a set even without thinking about implied odds, so can I cap even lower? Usually I just call if I get three bet with a small pair when I've already got two bets in, but if there are that many loose players in, does this change anything?

AKs or AQs multiway. When it looks like there are going to be three or four players, then just AKs. I might stretch a bit and cap with AJs if it's just me and a blind that I think believes I may be stealing too much. It's alot easier to cap with a pocket pair when you know you are getting six opponents. However now you are also going to take the turn for one bet with ordinary flops that missed you completely. Still, a set on the flop is much better than having a nut flush draw.
