The term river comes from the old Mississippi river gambling boats in which poker was played.....A slang term came about in which someone caught a card "down river" which means they caught the card on the end or as the boat proceeded down the river.....That slang term transformed into the term river.

I do not know where the term "turn" came from!

My understanding is that poker started out as a game called poque (French) and that Southern US'ers on the riverboats were pronouncing it poh kuh which then became "poker" as it moved around the country. Before it had really become known universally as "poker" there were still a number of variants and one played on riverboats commonly was called "up the river down the river" and the final card became known as the river. Perhaps the turn is a reference to turning from going up the river to going back down the river? I don't know on that account.
